Ingredients
FOR THE MARINADE:
- 2 Boneless Skinless Chicken Breasts
- 4 whole Garlic Cloves, Crushed
- 5 whole Limes, Juiced (about ¼ Cup)
- 1 teaspoon Salt
- 1 teaspoon Freshly Ground Pepper
FOR THE RELISH:
- 1 cup Fresh Or Frozen (and Thawed) Corn Kernels
- 1 whole Fresh Jalapeno, Seeded And Chopped
- ¼ cup Diced Red Bell Pepper
- ½ cup Chopped Cilantro
- 1 Avocado
- 1 whole Lime, Juiced (1 Lime Should Give You About 2 Tablespoons)
- ½ teaspoon Salt
Directions
Place chicken breasts in a large plastic storage bag. Combine marinade ingredients (lime juice, crushed garlic cloves, salt, and black pepper) and pour over chicken. Seal bag and marinate in refrigerator for several hours to overnight.
Before grilling, combine all corn relish ingredients (corn kernels, chopped jalapeno, diced red bell pepper, cilantro, diced avocado, lime juice, salt) in a medium bowl.
Set grill to medium heat and cook chicken breasts about 4 to 6 minutes per side or until internal temperature reaches 170 degrees F. Remove from grill and serve.
For serving, spoon corn relish over each piece of chicken

I was born in California and raised by my grandparents. My family calls me Bess. My friends call me Bags. Everyone else just calls me Elizabeth. People say I’m spoiled, I think I’m “gifted”. The same people who think I’m spoiled say I’m not using the word “gifted” correctly. I’m an only child… Sort of. I have a half-brother in Seattle that I didn’t know about until after my father passed away when I was 14. I also have 5 aunts and uncles who are like my older brothers and sisters, and I have 8 cousins who are like my younger brothers and sisters. Consequently, I suffer from only, older, younger and middle child syndrome. I reluctantly went to college in Dallas, TX and eventually fell in love with the Lone Star State and have pretty much lived here ever since. My love for music took me to Austin, where I met my now husband. My love for him took me to Houston. We’ve been married for a year and half and have enjoyed the most amazing first year of marriage. The Hubby’s job provided us the opportunity to travel for extended periods of time to Singapore and Spain giving us more than just a taste of different cultures. Living overseas was quite an experience, but we are homebodies and are very glad to be home closer to family and friends. We’ve recently become new homeowners. Our life is centered around our cat BooBoo Kitty, which is very sad, but undeniably true. 250!
